Experience science at its most succulent at The Chewy Gummy Physics Funfair: send your tongue on a taste-tripping adventure with the help of miracle berries, indulge in a calorie-free feast at the balloon bar and learn about frequency through the medium of jelly babies.

Chefs from top Brighton restaurant, Due South, will be exploring and demonstrating the magical natural reactions that cause jelly, jellification and spherification – a sweet toothed look at some of the cutting edge culinary techniques that have come out of the science lab & into the kitchen. Oh, and maybe just a little bit of fun with liquid nitrogen (instant ice cream lollipops anyone?)

Fantastic foodie science: Mineral Miracle Berries, Jelly Baby Wave machine, Edible Balloons, Gummy Bear Chandelier, fruit and vegetable carving. Food like you’ve never seen it.
