Chefs from top Brighton restaurant, Due South, will be exploring and demonstrating the magical natural reactions that cause jelly, jellification and spherification – a sweet toothed look at some of the cutting edge culinary techniques that have come out of the science lab & into the kitchen. Oh, and maybe just a little bit of fun with liquid nitrogen (instant ice cream lollipops anyone?)
Fantastic foodie science: Mineral Miracle Berries, Jelly Baby Wave machine, Edible Balloons, Gummy Bear Chandelier, fruit and vegetable carving. Food like you’ve never seen it.
